La Brezza helm by Chef de cuisine Luca Moioli is one of The St Regis Singapore’s specialty restaurant serving fine trattoria style Italian cuisine from various regions of Italy in a relaxing & tranquil environment beside the pool and mini garden for its alfresco seating.
As this is our first time at La Brezza, we will be trying out the specially crafted 7 Course Degustation Dinner Menu allowing us to taste more variety of their signature dishes.
The La Brezza degustation menu comes with a 5 course S$148++ or 7 course S$168++ option and for wine lovers, just top up an extra S$60 for wine pairing experience.
Prosciutto di Parma with Rock Melon (8/10)
We started off with a classic italian dish, thinly slice parma ham with sweet yet still firm texture rock melon showcasing a perfect balance of sweetness, saltiness and both individual ingredients enhanced by the balsamic vinegar.
Our next dish, thinly sliced wagyu beef eye round with rocket salad, celery flakes & shaved parmesan cheese. This dish originates from Venice is named after Venetian painter Vittore Carpaccio. Since it is served raw, the meat must be very fresh and carefully prepared. The buttery thin wagyu would just melt in the mouth with the rocket salad adding the extra zest in the flavours.
Pumpkin Soup with Ravioli (8/10)
We were then served pumpkin soup with ravioli, the rich yet not too overwhelming thick soup is very aromatic and heart warming. When eaten with the ravioli, the pumpkin soup becomes pumpkin sauce coating the ravioli nicely.
Pan Seared Hokkaido Scallops & Alaskan King Crab Salad (7/10)
Next, a well seared Hokkaido Scallops and Alaskan King Crab Salad served with crispy breaded crab polpetta, salmon roe & drizzled with some lemon thyme vinaigrette. The Hokkaido Scallop size is a little too small which is the only imperfection for this.
Cannelloni Ricotta & Spinach (7/10)
For pasta we were served Cannelloni filled with spinach & ricotta cheese, sauteed asparagus, pine nuts, fennel puree, pomodoro espuma and fried tarragon leaves.
Oven Baked Tuscan Sea Bass with Shrimp (7/10)
The oven baked tuscan sea bass with shrimp is served with marinated vegetables, Sicilian lemon and butter sauce. The seabass skin is crispy yet the meat retaining the moist, leaving the meat soft & juicy.
Grilled Lamb Chops with Cheese Crust and Slow Cooked Lamb Shank (9/10)
Grilled to perfection, the tender medium rare lamb chop is a must try, flavourful and with a cheesy crust while the fork tender lamb shank fully absorbed the broth’s aroma & essence making it very savory. Accompanied the lamb were potato gratin, avocado salad with thyme sauce & pomegranate essence.
Consider after the many dishes before this, we actually manage to finish this one proved it is a meal well worthy.
We ended the degustation menu with a classic Italian Tiramisu, rich mascarpone cheese with sponge cake fused with coffee liquor and sprinkle with cocoa powder on the top. Additional coffee liquor should make this dish perfect.
After completing the satisfying and indulgent meal only to realize we actually ate 8 course with the parma ham with rock melon as complimentary from the chef. Service at the restaurant was impeccable and even on Monday night, the restaurant was almost full.
