Yan Ting (宴庭) at St Regis Singapore literally translate as Imperial Court the venue which hosts lavish banquet during Imperial China, serves exquisite Cantonese cuisine inspired by the culture rich Ming Dynasty.
Insisting on using only the best & freshest ingredients and unwavering traditional cooking techniques focusing on enhancing the natural flavours of the ingredients that satisfies one’s palate is the main fundamental at the restaurant.
We will be trying the Signature Ala Carte Highlights, a tasting menu highlighting some of the crème de la crème timeless & seasonal dishes specially curated by Executive Chef Tony Wun.
Crispy Roasted Pork, Pan Seared Foie Gras & Marinated Cucumber with Garlic
We started off with a Trio Appetizers of crispy roasted pork, pan seared foie gras & marinated cucumber. The roasted pork is one of the best every with is heavenly crispy skin that makes crackling sound yet very tender meat with perfect ratio proportion of meat & fat. The creamy foie gras nicely seared and just melt in your mouth.
Double Boiled Abalone Consomme with Ginseng
Next is the double boiled abalone consomme with ginseng. Consomme is a clear soup made from a very rich broth that has been clarified thus leaving the soup clear of impurities while double boiled is a traditional Cantonese cooking method to locked in all the ingredient essence into the soup.
Though as clear as water, the dense rich flavour of the consomme continuously explodes in our mouth, enjoying all the essence in the consomme and finishing the dish with an flavorful abalone. A perfect score for this dish!
Wok baked Lobster in Superior Stock
The wok baked lobster cooked perfectly, the meat is succulent and fully absorbed the superior stock enhancing the taste.
Deep Fried Sea Perch Fillet with Spicy Mango Sauce
The sea perch is deep fried with a crispy outer layer pair with thai chili sauce and mango chunks making the sauce sweet & slight spicy.
Fragrant Homemade Almond Tea with Egg White & Crispy Layered Radish Pastry
Lastly for our dessert, a fragrant almond tea with egg white chunk, you either love it or hate this dishe as the strong pungent aromatic almond is heavenly for me yet a nuisance for others.
Overall the meal were top notched, definitely one of the best Cantonese cuisine we ever tasted especially the consomme & the roasted pork, both we dont mind eating daily.
