Sambal Takes Centre Stage at Kimpton Naluria Kuala Lumpur

At Kimpton Naluria Kuala Lumpur, the humble sambal is elevated from condiment to cultural storyteller in Rasa Naluria: Sambal Warisan, a seasonal dining experience that celebrates memory, place and Malaysian culinary craft. Presented at the hotel’s farm-to-table venue, Tuai + Till, the buffet runs from 26 February to 19 March 2026, inviting diners to explore sambal not as an accompaniment, but as the soul of the meal.


Set within the vibrant energy of Tun Razak Exchange, the experience reflects Malaysia’s multicultural tapestry through flavours shaped by heritage and personal memory. Drawing inspiration from the culinary team’s own childhoods, each dish is rooted in tradition yet presented with thoughtful creativity, pairing classic Malaysian fare with unexpected Western elements to illustrate sambal’s versatility and depth.


The journey unfolds in two distinct chapters. The opening phase (26 February to 4 March) leans into heritage and nostalgia, highlighting fermented flavours, earthy ingredients and gentle heat. Standout dishes include Gulai Tempoyak Ikan Patin with Pahang’s Sambal Hitam, a tribute to riverine cooking traditions, alongside Sotong Bakar with Sambal Budu from the East Coast, and Pucuk Ubi Masak Lemak Putih paired with Sambal Hijau, underscoring the everyday importance of vegetables in Malaysian cuisine.


From 5 to 19 March, the menu evolves into a bolder, more aromatic expression, spotlighting grilled and roasted flavours with greater intensity. Highlights include Daging Masak Jintan with Sambal Belacan, Itik Salai Masak Lemak Cili Api served with Javanese Sambal Tomato, and Ikan Bakar paired with Perlis and Kedah’s Sambal Mangga, delivering bright, punchy flavours that define this celebratory second act.


While sambal leads the narrative, the buffet extends beyond it with indulgent centrepieces such as roasted whole lamb with Harissa Nasi Kabsa, premium seafood selections, elegant cold cuts, and traditional rice accompaniments like lemang pulut, ketupat palas, and house-made serunding. Desserts strike a balance between nostalgia and surprise, from onde-onde and kuih seri muka to more adventurous creations like single-origin chocolate with mango chilli and serawa durian with pandan roti jala.



At its heart, Rasa Naluria: Sambal Warisan is less about spectacle and more about storytelling—a flavour-driven exploration of identity, heritage and connection, told through one of Malaysia’s most beloved culinary expressions.
